Spaghetti with Pesto, Prawn and SunDried Tomatoes

Spaghetti
Fresh basil pesto
Prawns, cooked
Sun dried tomatoes in olive oil, chopped
Lemon juice
salt and pepper

In a large pot, boil spaghetti until al dente.
In a large bowl, toss together all the ingredients until thoroughly mix.


Fish Pie

Fillets of any firm fish ( I'm using white fish )

1 small fillet of white fish, chopped
Melange of fresh prawns, crayfish and scallops

2 large shallots, chopped
2 tbsp olive oil
40g butter
Leaves from 1 large sprig fresh thyme
4 level tbsp flour
250ml fish stock
200ml milk
4 tbsp double cream
4 hard boiled eggs
1 tbsp fresh lemon juice
2 cups grated gouda
Salt and freshly ground black pepper

Heat the oven to 200C.
Prepare a shallow ovenproof casserole or pie dish, about 2-litre capacity.

Saute the shallots in the oil and butter with the thyme leaves for about 5 minutes until softened.
Stir in the flour and cook for a minute or so. Heat the stock in a small pan or a jug in the microwave. Gradually stir it into the pan with a wooden spoon until smooth and boil for about 5 minutes until reduced by a third, then mix in the milk and simmer again for 2 minutes. Season well, then add the cream.

Meanwhile, cut the fish and cod into bite-sized chunks and scatter in the baking dish with the fish, scallops, crayfish and prawns. Sprinkle with the lemon juice and seasoning. Set the dish on a baking tray.

Place the sliced eggs on top of the filling.
Pour over the sauce and topped with some grated cheese.
Put the pie immediately in the oven. Bake for 10 minutes, then turn the oven down to 180C, and bake for another 20 minutes, turning if it browns unevenly. Allow to stand for 10 minutes before cutting and serving.


Steak with black pepper sauce

Menu buka puasa ala2 western. Anak2 suka sangat kalau bab2 steak ni..Dah lama tak pekena steak..cam mengidam pulak! Saya paling suka resepi sos blackpepper Bhuchah ni..dah la senang! sedap lak tu..yg dging tu perap mcm biasa,

Bahan2:

2 sudu besar butter
2 sudu besar tepung gandum
2-3 cawan freshmilk
Segenggam black pepper yg ditumbuk kasar
2 sudu besar sliced mushroom
2 susu besar kicap
Garam secukup rasa
1/4 kiub pati ayam

Cara2:
Cairkan butter dlm saucepan. Bila butter cair masukkan tepung, kacau rata. Bila dah berbuih2 gitu masukkan freshmilk,black pepper,mushroom & kiub pati ayam. Kacau sehingga agak pekat. Masukkan kicap dan perisakan dgn garam. Matikan api selepas menggelegak. Ikut suka la sos tu nak pekat mana.
